If anyone has any good recipes please email them to me and i will post them.
Here are some of my favorites. The points have been calculated using the Weight Watcher's Flex Plan or I have inlcuded the nutrition information.

Chewy Cupcake Brownies       * 14-Dec*

3/4 cup all-purpose flour
1/2 cup unpacked brown sugar, firmly packed
1 Tbsp unpacked brown sugar, firmly packed
3 Tbsp unsweetened cocoa
1/2 tsp baking soda
1/4 tsp table salt
1/2 cup water
1/4 cup unsweetened applesauce
1/2 tsp vinegar, cider
1 1/2 tsp margarine, melted
1/2 tsp vanilla extract

Preheat oven to 350°F.

In a bowl, stir together flour, brown sugar, cocoa, baking soda and salt. In a second bowl stir together remaining ingredients. Pour water mixture over flour mixture and stir until batter is smooth.

Pour into a nonstick 12-hole muffin tin coated with cooking spray, filling until half full. Bake until toothpick inserted in center of cupcake comes out clean, 18 to 20 minutes.

Remove from oven. Let sit 5 minutes, then turn out onto rack to completely cool.

1 point each if you make 12 or half a point each if you make in the little baby muffin trays.

I recommend using the little muffin tray because then you can have two for a point. Try dusting them with icing sugar or putting a maraschino cherry in the middle (just be sure to dry it first). They are chewy little morsels of heavenly goodness!


Bake 'N Serve Fruit Cake       * 13-Dec*

From: Splenda.ca
1 1/2 cups (375 mL) chopped candied fruit
1/2 cup (125 mL) raisins
1/4 cup (50 mL) rum or cold coffee
1 1/4 cups (300 mL) all purpose flour
3/4 cup (175 mL) SPLENDA Granular
2 tsp (10 mL) baking powder
1 1/2 tsp (7 mL) cinnamon
1/2 tsp (2 mL) nutmeg
1/2 tsp (2 mL) allspice
1/2 tsp (2 mL) salt
2 eggs
1/2 cup (125 mL) unsweetened applesauce
1/4 cup (50 mL) vegetable oil
1/2 cup (125 mL) coarsely chopped nuts (pecans, walnuts, filberts)

Combine candied fruit, raisins, and rum or cold coffee. Let stand 30 minutes or until most of the liquid is absorbed.

Mix flour, SPLENDA*, baking powder, cinnamon, nutmeg, allspice and salt; set aside. Whisk together eggs, applesauce and oil until smooth. Stir in fruit mixture, flour mixture and nuts until blended. Spread evenly in greased 8" x 4" (22 x 11 cm/1.5 L) loaf pan.

Bake at 350ºF (180ºC) for 45-50 minutes or until a tester inserted in centre comes out clean. Cool in pan for 10 minutes. Remove from pan and cool on rack. Wrap well and refrigerate.

20 Servings (43g), Energy: 147 Cal, Protein: 2.0 g, Fat: 5.3 g, Carbohydrates: 23.5 g

For this recipe I used the cold coffee instead or rum and I bought the deluxe candied fruit with no orange peel (yuck orange peel!). It was awesome!


Banana Chip Bars       * 13-Dec*

From: Splenda.ca
1 cup (250 mL) all-purpose flour
1/2 cup (125 mL) quick-cooking rolled oats
1 tsp (5mL) baking powder
1/2 tsp (2 mL) baking soda
1/2 tsp (2 mL) cinnamon
1/4 cup (50 mL) margarine, softened
1 egg
1/2 tsp (2 mL) vanilla
1 cup (250 mL) mashed ripe banana
1/2 cup (125mL) SPLENDA* Granular
1/3 cup (75mL) semi-sweet chocolate chips

Combine candied fruit, raisins, and rum or cold coffee. Let stand 30 minutes or until most of the liquid is absorbed.

Mix flour, oats, baking powder, baking soda, cinnamon and salt; set aside. Beat margarine until smooth. Add egg and vanilla and beat well. Beat in banana and SPLENDA* for 1 minute. Add flour mixture; beat until well blended. Stir in chips.

Spread evenly in greased 8-inch (20 cm) square baking pan. Bake at 350?F (180?C) for 25 to 30 minutes or until tester inserted in centre comes out clean. Cool. Cut in bars.

Optional: Sprinkle with additional rolled oats before baking, if desired.

20 Servings , Energy: 82 Cal, Protein: 1.5 g, Fat: 3.7 g, Carbohydrates: 11.2 g

These are like banana bread with choclate chips in them. The are delish!


Easy Tuna Casserole

1 can tuna in water, drained
1 cup whole wheat macaroni, uncooked
1 onion, chopped
1 can peas, drained (baby peas if possible)
1 can reduced fat Cream of Mushroom soup
1 cup skim milk
3 Tbsp. reduced fat cheddar cheese, shredded
1 can mushrooms

In a casserole dish, stir together the tuna, macaroni, onion, peas, mushroom soup, and milk. Make sure the macaroni is covered by the sauce. Sprinkle with the cheddar cheese. Cover and bake at 350 for 1 hour.

4 servings, 4 POINTS each

This recipe is very good!!! You can freeze the left overs!
